Artichoke-stuffed Mushrooms Recipe

Ingredients
  • 2 garlic cloves, sliced
  • 3 green onions, sliced
  • 1/2 c grated Parmesan cheese
  • 1/4 tsp pepper
  • 1 1/2 lbs large fresh mushrooms
  • 1/4 c dry white wine
  • 1 tbsp olive oil
  • 1/4 c sliced onion
  • 1 (14-oz) can artichoke hearts, drained & sliced
  • 1/2 c mayonnaise
  • 1/4 c soft breadcrumbs
  • 1/4 tsp salt

Directions
  • Step #1 Rinse & pat mushrooms dry.
  • Step #2 Remove stems, & chop; reserve mushroom caps.
  • Step #3 Sauté mushroom stems, onion, & garlic in hot oil In a large-ish skillet over med-heat/flame 5 mins or until onion is tender.
  • Step #4 Add wine, & cook 2 mins or until liquid evaporates.
  • Step #5 Stir in breadcrumbs.
  • Step #6 Remove from heat, & let cool.
  • Step #7 Combine onion mixture, artichoke, & next 5 ingredients.
  • Step #8 Spoon 1 tspful into each mushroom cap.
  • Step #9 Place on a lightly greased rack in a roasting pan.
  • Step #10 Bake at 350° for 12 to 15 mins or until golden.
