Smoked Salmon Platter
Ingredients
1/2 c 1% low-fat milk
1/3 c all-purpose flour (about 1 1/2 oz)
2 tbsps fine-ground yellow cornmeal
1/4 tsp salt
1 large egg white
4 oz cold-smoked salmon, cut into 24 (2-inch) strips
1 large egg yolk
1 ear shucked corn
1/4 tsp black pepper
Chopped fresh chives (optional)
1 tbsp minced fresh chives
Cooking spray
1/2 c reduced-fat sour cream
Directions
Step #1 Combine sour cream & chives in a small bowl.
Step #2 Cover up & put in the fridge.
Step #3 Cut kernels from ear of corn.
Step #4 Scrape remaining pulp from cob using the dull side of a knife blade.
Step #5 Discard cob.
Step #6 Set corn aside.
Step #7 Lightly spoon flour into a dry measuring c; level with a knife.
Step #8 Combine flour & cornmeal in a medium bowl; make a well in center of mixture.
Step #9 Combine milk & egg yolk in a small bowl; stir well with a whisk.
Step #10 Add milk mixture to flour mixture, & stir with a whisk just until moist.
Step #11 Stir in corn, salt, & pepper.
Step #12 Place egg white in a bowl; beat with a mixer at high speed until foamy.
Step #13 Gently fold egg white mixture into corn mixture.
Step #14 Heat a large nonstick skillet over med-heat/flame.
Step #15 Coat pan with cooking spray.
Step #16 Spoon about 1 tbsp batter per blini onto pan, spreading to about 2-inch diameter.
Step #17 Cook 2 mins or until tops are covered with bubbles & edges begin to set.
Step #18 Carefully turn blinis over; cook for 1 min longer.
Step #19 Transfer blinis to a serving platter, & arrange in a single layer; keep warm.
Step #20 Repeat process with the remaining batter.
Step #21 Top each blini with 1 piece salmon & 1 tsp sour cream mixture.
Step #22 Garnish with sliced chives, if desired.
