Leek-and-potato Fritters Recipe

Ingredients
  •  Sour cream (optional)
  • 1 tsp salt
  • 1 large russet potato, peeled & cut into 2-inch pieces (about 1/2 lb)
  • 1/2 c matzo meal or fine, dry breadcrumbs
  • 1/3 c grated Parmesan cheese
  • 4 large eggs, lightly beaten
  • 2 lbs leeks, thinly sliced
  • 1 tsp salt
  • 3/4 tsp freshly ground pepper
  • 1/2 c canola oil

Directions
  • Step #1 Cook potato & salt in a Dutch oven in boiling water to cover 20 mins or until tender; drain.
  • Step #2 Mash potato, & set aside.
  • Step #3 Cook leeks in Dutch oven in boiling water to cover 3 mins; drain.
  • Step #4 Stir together potato, leeks, & next 5 ingredients.
  • Step #5 Chill 1 hr.
  • Step #6 Shape mixture into 18 patties.
  • Step #7 Cook, in batches, in hot oil In a large-ish skillet 2 mins on each side or until golden brown.
  • Step #8 Serve as soon as possible with sour cream, if desired.
