Lemon Tofu Cream Recipe

Ingredients
  • 1 tbsp vegetable oil
  • 2 tbsps fresh lemon juice
  • 1 (2-inch) piece peeled fresh ginger
  • 8 oz firm silken tofu, drained
  • 1/2 tsp fine sea salt

Directions
  • Step #1 Finely grate ginger; place ginger on several layers of damp cheesecloth.
  • Step #2 Gather edges of cheesecloth together; squeeze over a small bowl to extract 1 tsp ginger juice.
  • Step #3 Combine ginger juice, lemon juice, salt, oil, & tofu in a food processor/blender; process until smooth.
