Olive And Onion Tapenade Recipe

Ingredients
  • 1/4 tsp freshly ground black pepper
  • 4 garlic cloves, finely sliced
  • 2 tsps sliced fresh or 1/2 tsp dried thyme
  • 1/4 c dry white wine
  • 2 tbsps white wine vinegar
  • 1/3 c pitted picholine olives (about 15 olives)
  • 1 2/3 c sliced pitted green olives
  • 1 tbsp olive oil
  • 1 c sliced onion

Directions
  • Step #1 Heat the oil in a saucepan over med-heat/flame.
  • Step #2 Add onion; cook 8 mins or until soft, stirring frequently.
  • Step #3 Stir in thyme & garlic; cook 2 mins, stirring frequently.
  • Step #4 Stir in wine & vinegar.
  • Step #5 Bring to a boil; reduce heat, & cook 8 mins or until most of liquid evaporates, stirring every once in awhile.
  • Step #6 Place the onion mixture in a food processor/blender.
  • Step #7 Add the olives & the black pepper, & process until smooth, scraping down the sides of bowl.
