Embezzler's Purses Recipe

Ingredients
  •  Dash of ground cinnamon
  • 4 sheets frozen phyllo dough, thawed
  • 8 green onion tops
  • 1/2 c (2 oz) finely crumbled feta cheese
  • 3/4 lb ground turkey
  • 1/4 tsp black pepper
  •  Dash of paprika
  • 1/4 c pine nuts, toasted
  • 2 tsps olive oil
  • 1/4 tsp salt
  • 8 oz packaged fresh spinach (about 4 c)
  • 4 tsps butter or stick margarine, divided & melted

Directions
  • Step #1 Preheat oven to 375°.
  • Step #2 Cook onion tops in boiling water 2 mins.
  • Step #3 Drain & plunge into ice water; drain.
  • Step #4 Heat olive oil In a large-ish nonstick skillet over medium-high heat.
  • Step #5 Sauté turkey 5 mins or until done.
  • Step #6 Add spinach; cook this until spinach wilts.
  • Step #7 Stir in cheese & next 5 ingredients (cheese through cinnamon); remove this from heat.
  • Step #8 Place 1 phyllo sheet on a large cutting board or work surface (cover remaining dough to keep from drying); lightly brush with 2 tsps butter.
  • Step #9 Top with a second phyllo sheet; cut into 4 squares.
  • Step #10 Spoon 1/3 c turkey mixture in center of each square.
  • Step #11 Gather 4 corners of phyllo & crimp to seal, forming a purse.
  • Step #12 Tie 1 green onion strip around top of each purse.
  • Step #13 Repeat with remaining phyllo, turkey mixture, butter, & green onion strips.
  • Step #14 Place purses on a baking sheet, & bake this at 375° for 8 mins or until golden brown.
