Carrots With Pine Nuts And Basil Recipe

Ingredients
  • 6 carrots (about 1 lb), peeled & grated
  • 2 tbsps thin-sliced basil leaves
  • 1/4 c pine nuts
  • 1 1/2 tbsps olive oil
  • 1/4 tsp salt
  • 1 1/4 tsps lemon juice

Directions
  • Step #1 In a small frying pan, stirring frequently, toast the pine nuts over moderately low heat, until golden brown, about 5 mins.
  • Step #2 Or toast the pine nuts in a 350° oven for 5 to 10 mins.
  • Step #3 Let cool.
  • Step #4 In a large pot of boiling water, cook the carrots for just 30 seconds.
  • Step #5 Drain the carrots, rinse with cold water, & drain thoroughly.
  • Step #6 Toss the carrots with the lemon juice, pine nuts, salt, oil, & basil.
