Colorful Christmas Pâté Recipe

Ingredients
  • 3/4 c oil-packed dried tomatoes, drained
  • 1 (8-oz) package cream cheese, softened
  • 1 c loosely packed fresh parsley sprigs
  • 1/4 c pine nuts, toasted
  • 3 tbsps olive oil
  • 3 cloves garlic, divided
  • 1 (4-oz) package feta cheese
  • 1 c loosely packed fresh basil leaves

Directions
  • Step #1 Line a 2 1/2-c mold or bowl with plastic wrap, leaving a 1" overhang around edges.
  • Step #2 Set aside.
  • Step #3 Beat cheeses at medium speed of an electric mixer until creamy; set aside.
  • Step #4 Combine basil & next 3 ingredients in container of an electric mixer; add 2 cloves garlic.
  • Step #5 Cover up & process until smooth, stopping once to scrape down sides; remove this from mixer, & set aside.
  • Step #6 Combine tomatoes & remaining garlic clove in container of electric mixer; process until smooth.
  • Step #7 Spoon one-third of cream cheese mixture into prepared mold, spreading evenly; spread with basil mixture.
  • Step #8 Spoon one-third of cream cheese mixture over basil mixture, spreading evenly; spread with tomato mixture.
  • Step #9 Spread remaining cream cheese mixture over tomato mixture.
  • Step #10 Cover up & chill at least 4 hrs.
  • Step #11 Unmold pâté onto a serving platter; peel off plastic wrap.
  • Step #12 Serve with baguette slices or assorted crackers.
