Abalone Cakes Recipe

Ingredients
  •  Canola oil
  • 1 tsp grated lime rind
  •  Dill Sauce
  • 2 tbsps minced seedless cucumber
  • 2 1/2 tsps grated orange rind
  • 1 large egg, lightly beaten
  • 1 tbsp fresh lemon juice
  • 2 c cornbread crumbs
  • 1 tbsp sliced fresh chives
  • 1/4 tsp freshly ground white pepper
  • 1 tsp salt
  • 2 tbsps fresh orange juice
  • 1 tsp ground coriander
  • 1/4 c sour cream
  • 1 tbsp fresh lime juice
  • 2 tbsps minced red onion
  • 2 tbsps minced red bell pepper
  • 1 tsp Old Bay seasoning
  • 1 1/2 tsps grated lemon rind
  • 14 oz abalone
  • 2 c panko breadcrumbs*

Directions
  • Step #1 Place abalone in a food processor/blender, & pulse until finely sliced.
  • Step #2 Transfer abalone to a bowl; add egg & next 5 ingredients.
  • Step #3 Stir in lime rind & next 7 ingredients.
  • Step #4 Combine citrus juices.
  • Step #5 Slowly add juice until mixture is slightly wet but still holds together.
  • Step #6 Cover up & chill at least 1 hr.
  • Step #7 Form chilled mixture into 10 balls (golf ball size); lightly roll in panko breadcrumbs.
  • Step #8 Flatten balls to form 1/2-inch-thick patties.
  • Step #9 Pour oil into a cast-iron skillet to a depth of 1 inch; heat to 375º.
  • Step #10 Fry patties, in batches, 3 to 4 mins on each side or until golden brown.
  • Step #11 Remove from pan, & drain on paper towels.
  • Step #12 Transfer to a baking sheet, & keep warm in a 200º oven.
  • Step #13 Repeat procedure with remaining patties.
  • Step #14 Serve with Dill Sauce.
  • Step #15 *Asian food stores carry panko breadcrumbs.
