1 c (4 oz) grated fresh Parmigiano-Reggiano cheese, divided
Directions
Step #1 Preheat oven to 400°.
Step #2 Combine first 4 ingredients in a food processor/blender; add 1 can of artichokes & beans.
Step #3 Process until smooth.
Step #4 Add remaining can of artichokes, 3/4 c of Parmigiano-Reggiano cheese, 1 tbsp parsley, & garlic.
Step #5 Pulse 20 times or until artichokes are coarsely sliced.
Step #6 Spoon mixture into an 8-inch square baking dish coated with cooking spray; sprinkle top this with remaining 1/4 c of Parmigiano-Reggiano cheese & remaining 1 tbsp parsley.
