Hot Artichoke Dip Recipe

Ingredients
  • 2 tbsps sliced fresh parsley, divided
  • 1/2 c reduced-fat sour cream
  • 1/2 tsp salt
  • 1 (15.5-oz) can Great Northern beans, rinsed & drained
  • 2 (14-oz) cans artichoke hearts, rinsed & drained, divided
  • 1 tbsp fresh lemon juice
  • 1/3 c reduced-fat mayonnaise
  •  Cooking spray
  • 3 garlic cloves, minced
  • 1 c (4 oz) grated fresh Parmigiano-Reggiano cheese, divided

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Combine first 4 ingredients in a food processor/blender; add 1 can of artichokes & beans.
  • Step #3 Process until smooth.
  • Step #4 Add remaining can of artichokes, 3/4 c of Parmigiano-Reggiano cheese, 1 tbsp parsley, & garlic.
  • Step #5 Pulse 20 times or until artichokes are coarsely sliced.
  • Step #6 Spoon mixture into an 8-inch square baking dish coated with cooking spray; sprinkle top this with remaining 1/4 c of Parmigiano-Reggiano cheese & remaining 1 tbsp parsley.
  • Step #7 Bake at 400° for 25 mins or until bubbly.
