Pesto-chicken Cheesecakes Recipe

Ingredients
  • 1 c sliced cooked chicken
  • 2 (8-oz) packages cream cheese, softened
  •  Mixed salad greens
  • 3 tbsps Pesto*
  • 3 tbsps all-purpose flour, divided
  • 1 (8-oz) container sour cream
  •  Garnish: sliced fresh chives
  • 2 large eggs

Directions
  • Step #1 Beat cream cheese at medium speed with an electric mixer until smooth.
  • Step #2 Add eggs, 2 tbsps flour, & Pesto, beating until mixed.
  • Step #3 Stir in chicken.
  • Step #4 Pour into 4 (4-inch) springform pansM1Bake at 325° for 20 mins.
  • Step #5 Stir together remaining 1 tbsp flour & sour cream.
  • Step #6 Spread over cheesecakes, & bake 10 more mins.
  • Step #7 Cool on a wire rack 10 mins.
  • Step #8 Gently run a knife around edges of cheesecakes, & release sides.
  • Step #9 Serve hot or cold atop salad greens.
  • Step #10 Garnish, if desired.
  • Step #11 * 1 c prepared pesto may be substituted for homemade.
  • Step #12 Note: Cheesecake mixture may be baked in a 9-inch springform pan.
  • Step #13 Add 5 mins to the initial baking time, & an extra 5 mins after adding the flour & sour cream.
