Polenta Crostini Recipe

Ingredients
  • 3 c fat-free, less-sodium chicken broth
  • 1/3 c whole grain yellow cornmeal
  •  Cooking spray
  • 1/3 c (1 1/2 oz) grated fresh Parmesan cheese
  • 1 tsp extra-virgin olive oil

Directions
  • Step #1 Bring broth & oil to a boil in a small saucepan.
  • Step #2 Add cornmeal, stirring constantly with a whisk until cornmeal begins to absorb liquid (about 2 mins).
  • Step #3 Reduce heat to low; cook 25 mins, stirring frequently.
  • Step #4 Remove from heat; stir in the cheese.
  • Step #5 Spoon cornmeal mixture into a 2-quart baking dish coated with cooking spray.
  • Step #6 Using a spatula coated with cooking spray, spread into an even layer.
  • Step #7 Cool to about room temp; cover & chill overnight.
  • Step #8 Preheat oven to 400°.
  • Step #9 Cut polenta into 20 pieces.
  • Step #10 Arrange in a single layer on a baking sheet coated with cooking spray.
  • Step #11 Bake at 400° 30 mins, turning after 15 mins.
  • Step #12 Cool to about room temp on a wire rack.
