Jumbo Lump Crab Cakes With Roasted Corn And Pickled Okra Relish Recipe

Ingredients
  •  Roasted Corn & Pickled Okra Relish
  •  Garnish: pickled okra pods, sliced vertically
  • 2 tbsps fresh lemon juice
  • 1/4 c olive oil
  • 1/8 tsp ground red pepper
  • 1 1/2 tbsps mayonnaise
  • 1 large egg, lightly beaten
  • 1 tbsp minced fresh chives
  • 1 lb fresh jumbo lump crabmeat, drained
  • 1/2 c soft breadcrumbs
  • 1/2 tsp salt

Directions
  • Step #1 Stir together first 6 ingredients; add crabmeat, & toss carefully.
  • Step #2 Stir in breadcrumbs.
  • Step #3 Cover up & chill mixture 30 mins.
  • Step #4 Shape into 8 (1 1/2-inch-thick) patties.
  • Step #5 Cook crab cakes in hot oil In a large-ish ovenproof skillet over medium-high heat for 3 to 4 mins on each side or until golden.
  • Step #6 Place skillet in oven, & bake this at 375° for 5 mins.
  • Step #7 Serve with Roasted Corn & Pickled Okra Relish.
