Celestial Chicken, Mint, And Cucumber Skewers With Spring Onion Sauce Recipe

Ingredients
  • 24 small mint leaves
  • 1 tbsp sliced fresh or 1 tsp dried dill
  • 1/2 lb skinned, boned chicken breast, cut into 24 (3/4-inch) pieces
  • 1 tbsp sliced fresh or 1 tsp dried tarragon
  • 1/3 c low-fat buttermilk
  • 2 tsps white wine vinegar
  •  Cucumber slices (optional)
  • 3 tbsps sliced green onion tops
  • 3 c water
  • 3/4 c low-fat mayonnaise
  • 1/2 small cucumber (about 2 oz)

Directions
  • Step #1 Place first 6 ingredients in a mixer; process until smooth.
  • Step #2 Cover up & chill in the fridge.
  • Step #3 Cut the cucumber lengthwise into 4 pieces; cut each piece crosswise into 6 (1/4-inch) slices.
  • Step #4 Bring water to a boil in a medium saucepan.
  • Step #5 Add chicken; cook 4 mins or until done.
  • Step #6 Drain well, & cool.
  • Step #7 Thread 1 chicken piece, 1 cucumber piece, & 1 mint leaf onto each of 24 (6-inch) skewers.
  • Step #8 Cover up & chill in the fridge.
  • Step #9 Serve with sauce; garnish with cucumber slices, if desired.
