Roasted-eggplant Dip Recipe

Ingredients
  • 1 (1-lb) eggplant
  • 1 lemon, cut into wedges
  • 1/3 c sliced fresh chives
  • 2 tbsps lemon juice
  • 1/4 tsp pepper
  • 3 large shallots, peeled
  • 1 tbsp olive oil
  • 4 (6-inch) pitas, each cut into 8 wedges
  • 1/2 tsp salt
  •  Paprika (optional)
  • 3 tbsps plain low-fat yogurt

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Pierce eggplant several times with a fork; place eggplant & shallots on a foil wrap-lined baking sheet.
  • Step #3 Bake at 400° for 20 mins or until tender; cool slightly, & peel.
  • Step #4 Place eggplant, yogurt, shallots, juice, & oil in a food processor/blender; process until almost smooth.
  • Step #5 Add chives, salt, & pepper; process just until mixed.
  • Step #6 Spoon dip into a bowl; garnish with lemon wedges, & serve this with pita wedges.
  • Step #7 Sprinkle top with paprika, if desired.
