Step #1 Preheat oven to 400°.
Step #2 Pierce eggplant several times with a fork; place eggplant & shallots on a foil wrap-lined baking sheet.
Step #3 Bake at 400° for 20 mins or until tender; cool slightly, & peel.
Step #4 Place eggplant, yogurt, shallots, juice, & oil in a food processor/blender; process until almost smooth.
Step #5 Add chives, salt, & pepper; process just until mixed.
Step #6 Spoon dip into a bowl; garnish with lemon wedges, & serve this with pita wedges.
Step #7 Sprinkle top with paprika, if desired.
