Cottage Cheese Gelatin Mold Recipe

Ingredients
  • 1 1/2 c boiling water
  • 1 1/2 c reduced-fat whipped topping
  • 1 3/4 c fat-free cottage cheese
  • 1 (0.3 oz) package sugar-free gelatin flavor of your choice

Directions
  • Step #1 In a bowl, dissolve gelatin in boiling water.
  • Step #2 In a mixer or food processor/blender, process the cottage cheese until smooth.
  • Step #3 Stir into gelatin.
  • Step #4 Refrigerate until partially set.
  • Step #5 Fold in whipped topping.
  • Step #6 Pour into a 3-c mold coated with nonstick cooking spray.
  • Step #7 Refrigerate until set.
