White Bean Dip Recipe

Ingredients
  • 3/4 c fat-free, less-sodium chicken broth
  • 1 1/8 tsps hot paprika, divided
  • 1 tbsp olive oil
  • 20 sesame breadsticks
  • 1 tbsp ground coriander seeds
  • 2 tbsps sliced fresh flat-leaf parsley
  • 1 (16-oz) can cannellini beans or other white beans, rinsed & drained
  • 6 garlic cloves, sliced

Directions
  • Step #1 Heat oil in a small saucepan over med-heat/flame.
  • Step #2 Add garlic, & 1 tsp paprika; cook 2 mins or until garlic is tender & lightly browned, coriander, stirring constantly.
  • Step #3 Add beans; cook 2 mins, stirring frequently.
  • Step #4 Add broth; bring to a boil.
  • Step #5 Cover up, reduce heat, & let simmer 15 mins.
  • Step #6 Place bean mixture in a food processor/blender; process until smooth.
  • Step #7 Stir in parsley.
  • Step #8 Spoon into a medium bowl; chill in the fridge.
  • Step #9 Sprinkle top with 1/8 tsp paprika.
  • Step #10 Serve with breadsticks.
