Rajas Con Queso Recipe

Ingredients
  • 1 onion (about 1/2 lb.), sliced
  • 3 fresh poblano chilies (about 10 oz. total)
  • 1/4 lb sliced jack cheese
  • 1 tbsp butter or margarine
  • 4 to 6 warm corn or flour tortillas (6 to 7 in. wide)

Directions
  • Step #1 Place chilies in a broiler pan & broil about 3 inches from heat, turning as needed to char & blister on all sides, about 8 mins total.
  • Step #2 Let cool.
  • Step #3 Pull off & discard stems & seeds.
  • Step #4 Cut chilies into thin strips.
  • Step #5 Meanwhile, stir butter & onion often until onion is limp, in a 6- to 8-inch frying pan over medium-high heat, 4 to 5 mins.
  • Step #6 Mix chilies with onions & lay cheese slices on the vegetables.
  • Step #7 Cover up & cook over low heat/flame until cheese melts, about 2 mins.
  • Step #8 Scoop hot cheese mixture into tortillas.
  • Step #9 Fold to enclose filling, & eat.
  • Step #10 Nutritional analysis per appetizer serving.
