Roasted Red Pepper-feta Crostini Recipe

Ingredients
  • 1 garlic bulb
  • 1/2 tsp pepper
  • 1 French baguette
  • 5 tbsps olive oil, divided
  • 1 (15.8-oz) can great Northern beans, rinsed & drained
  • 1/2 (16-oz) jar roasted red bell peppers, drained
  • 1/2 tsp salt
  • 1 (4-oz) package crumbled feta cheese, divided
  • 1 tbsp red wine vinegar

Directions
  • Step #1 Cut off pointed end of garlic bulb; place garlic on a piece of aluminum foil wrap, & drizzle with 1 tbsp oil.
  • Step #2 Fold foil wrap to seal.
  • Step #3 Bake at 425° for 30 mins; cool.
  • Step #4 Squeeze pulp from garlic.
  • Step #5 Process garlic pulp, beans, 2 tbsps oil, & next 4 ingredients in a food processor/blender until smooth.
  • Step #6 Add half of cheese, & pulse 5 to 6 times or until mixd.
  • Step #7 Cut bread, at a diagonal, into 24 (1/4-inch) slices.
  • Step #8 Arrange on a baking sheet; brush evenly with remaining 2 tbsps oil.
  • Step #9 Spread 2 tbsps bean mixture on 1 side of each bread slice, & sprinkle with remaining feta cheese.
  • Step #10 Bake at 350° for 5 to 7 mins.
