Indian-spiced Phyllo And Smoked Salmon Napoleons Recipe

Ingredients
  •  Salt
  • 5 sheets of phyllo dough, thawed
  • 1 1/2 c plain yogurt
  • 4 tbsps unsalted butter
  • 1/2 tsp ground cumin
  • 1/2 c heavy cream
  • 1/3 c finely sliced red onion
  • 1/4 c cilantro leaves
  • 1/4 tsp ground coriander
  • 1 large jalapeño, seeded & minced
  • 1/2 lb thinly sliced smoked salmon
  • 4 large radishes--3 cut into matchsticks, 1 thinly sliced
  • 1 tsp pure chile powder
  • 2 tbsps mint leaves
  • 2 tbsps snipped chives
  • 1/8 tsp cayenne pepper

Directions
  • Step #1 Drain the yogurt in a coffee filter in the refrigerator for at least 3 hrs or overnight.
  • Step #2 Preheat the oven to 375°.
  • Step #3 In a small saucepan, melt the butter.
  • Step #4 Let cool slightly, then pour this into a small bowl, leaving the milk solids behind.
  • Step #5 Stir in the chile powder, cumin, coriander & cayenne.
  • Step #6 Cut the phyllo sheets in half crosswise.
  • Step #7 Working with 3 sheets at a time & keeping the rest covered with plastic wrap & a kitchen towel, brush the sheets with some of the spiced butter & stack them in three separate 3-layer piles; discard the remaining phyllo.
  • Step #8 Trim any ragged edges.
  • Step #9 Cut 1 of the stacks into six 3 1/2 -inch squares.
  • Step #10 Transfer all the phyllo to 2 baking sheets, & bake for about 10 mins, re-forming the cut rectangle, or until golden; let cool.
  • Step #11 In a mixer, puree the yogurt with the cilantro, chives & mint.
  • Step #12 Transfer to a small bowl & stir in the the radish matchsticks, onion & jalapeño.
  • Step #13 Whip the cream until it holds firm peaks & fold it into the herbed yogurt; season this with salt.
  • Step #14 Reserve 1/2 c of the yogurt.
  • Step #15 Set 1 of the large phyllo stacks on a work surface & top this with half of the salmon & half of the herbed yogurt.
  • Step #16 Cover up with the second large phyllo stack & the remaining salmon & yogurt.
  • Step #17 Top with the phyllo squares, re-forming the rectangle.
  • Step #18 Using a very sharp knife, cut the napoleons, between the squares, wiping the knife blade after each cut.
  • Step #19 Set each napoleon on a plate, top this with a dollop of the reserved yogurt, garnish with radish slices & serve.
  • Step #20 Make Ahead: The recipe can be prepared through Step 4 up to 1 day ahead.
  • Step #21 Wrap the phyllo on the 2 baking sheets tightly with plastic & store at about room temp.
  • Step #22 Refrigerate the herbed yogurt.
  • Step #23 Recrisp the phyllo in a 325° oven before proceeding if necessary.
  • Step #24 Serve With: A mesclun salad.
