Piquillo-tuna Butter Recipe

Ingredients
  • 6 oz imported jarred tuna fillet packed in olive oil, drained
  • 8 medium piquillo peppers
  •  Salt & freshly ground pepper
  • 4 oz unsalted European-style butter, softened
  • 2 tsps fresh lemon juice

Directions
  • Step #1 In a food processor/blender, tuna, mix the butter, piquillo peppers & lemon juice; process until creamy.
  • Step #2 Spice up with salt & pepper & serve this with toast, spread on sandwiches or use as a dip.
  • Step #3 Make Ahead: The butter can be put in the fridged for up to 1 week.
