Endive With Caramelized Pears And Blue Cheese Recipe

Ingredients
  • 24 small Belgian endive leaves (about 3 heads)
  •  Cooking spray
  • 2/3 c (about 3 oz) crumbled blue cheese
  • 1 tsp sliced fresh parsley
  • 1 1/2 c sliced peeled Bosc pear (about 3 medium)
  • 1/8 tsp salt
  • 1 tbsp sugar
  • 2 tbsps sliced walnuts, toasted

Directions
  • Step #1 Heat a large nonstick skillet over medium-high heat.
  • Step #2 Coat pan with cooking spray.
  • Step #3 Add pear & sugar to pan; sauté 2 mins or until tender.
  • Step #4 Cool.
  • Step #5 Place pear mixture, blue cheese, walnuts, & salt in a bowl; stir carefully to mix.
  • Step #6 Spoon about 1 1/2 tbsps pear mixture into each endive leaf.
  • Step #7 Arrange leaves on a platter; sprinkle evenly with parsley.
