Steamed Oysters With Chile, Ginger, And Coriander Recipe

Ingredients
  • 12 small cilantro sprigs
  • 2 tbsps mirin (sweet rice wine)
  • 1 small fresh red chile, halved lengthwise, seeded, & cut into 12 thin strips
  • 2 tbsps rice vinegar
  • 1/4 tsp Szechwan peppercorns, crushed
  • 12 oysters on the half shell, drained
  • 2 tbsps thinly sliced peeled fresh ginger

Directions
  • Step #1 Arrange 6 oysters on the half shell in a vegetable steamer.
  • Step #2 Combine vinegar & mirin in a small bowl, & stir well.
  • Step #3 Drizzle 1 tsp vinegar mixture over each oyster; top each with 1 cilantro sprig, 1 slice of ginger, & 1 strip of chile.
  • Step #4 Sprinkle top half of crushed peppercorns over oysters.
  • Step #5 Steam, covered, 2 mins or until edges of oysters curl.
  • Step #6 Repeat procedure with remaining oysters, vinegar mixture, ginger, cilantro, chile, & peppercorns.
  • Step #7 Serve warm.
