  • Step #1 In a food processor/blender, mix 2 2/3 c all-purpose flour, 1 c (3 oz.
  • Step #2 ) finely shredded aged gouda or gruyère cheese, & 13 tbsps (6 1/2 oz.
  • Step #3 ) butter that has been cut into chunks.
  • Step #4 Pulse until coarse crumbs form (mixture will be lumpy).
  • Step #5 Add 10 oz cold cream cheese (cut into chunks), & pulse 5 times.
  • Step #6 Add 3 large egg yolks & pulse until dough begins to hold together.
  • Step #7 Place dough onto lightly floured board & knead until it forms a ball, about 10 times.
  • Step #8 It should look marbled.
  • Step #9 Divide dough in half & pat each portion into a flat disk 8 inches wide.
  • Step #10 Use as soon as possible, or put in the fridge or freeze (see below).
  • Step #11 Do-ahead tip: Make dough up to 3 days ahead.
  • Step #12 Wrap airtight & put in the fridge.
  • Step #13 Alternately, freeze the dough, wrapped airtight, for up to 3 weeks.
