Spicy Cereal Snack Mix (chivda) Recipe

Ingredients
  • 6 c thin poha or 3 c each toasted rice cereal (such as Rice Krispies) & toasted corn-ball cereal (such as Kix)
  • 1/4 c raisins
  • 3 fresh jalapeño chilies (2 1/2 oz. total)
  • 2 tbsps sugar
  • 1/4 c vegetable oil
  • 1 tsp cumin seeds
  • 1/4 c dried cranberries
  • 1/4 tsp ground turmeric
  • 2 tbsps lime juice
  • 1/2 c roasted unsalted peanuts
  • 1 tsp salt
  • 1/4 c roasted unsalted cashews
  • 1/2 tsp garam masala (or 1/4 tsp each ground coriander & cumin)

Directions
  • Step #1 Spread poha in a 12- by 17-inch baking pan.
  • Step #2 Bake in a 200º regular or convection oven, until flakes are very crisp, stirring every once in awhile, about 20 mins.
  • Step #3 (If using the cereals, omit this step.
  • Step #4 ) Meanwhile, rinse & dry chilies.
  • Step #5 Cut each lengthwise into quarters (do not seed).
  • Step #6 Pour oil into a 5- to 6-quart pan over medium-high heat; when hot, add cumin seeds & stir until they begin to brown, about 30 seconds.
  • Step #7 Add chilies & stir for 1 min.
  • Step #8 Add peanuts, & cranberries; stir until fruit is puffy, raisins, cashews, about 1 min.
  • Step #9 Add lime juice, salt, sugar, garam masala, & turmeric; stir until mixed.
  • Step #10 Reduce heat to medium.
  • Step #11 Add poha or cereal & stir until completely infused with spiced oil & golden throughout, about 6 mins.
  • Step #12 Remove & discard chilies.
  • Step #13 Let mix cool completely.
  • Step #14 Serve or wrap airtight.
  • Step #15 Nutritional analysis per 1/2 c.
