Tomato Tapenade Recipe

Ingredients
  • 1 peeled clove garlic
  •  Salt & pepper
  • 1 oz (3/4 to 1 c) dried tomatoes
  • 2 tbsps sliced fresh basil leaves or 1 tsp dry basil
  • 3 tbsps pine nuts or slivered almonds
  • 3 tbsps grated parmesan cheese

Directions
  • Step #1 In a bowl, cover tomatoes with boiling water.
  • Step #2 Let stand until soft, 10 to 15 mins.
  • Step #3 Meanwhile, in a 6- to 8-inch frying pan over med-heat/flame, stir pine nuts until golden, about 5 mins.
  • Step #4 Drain tomatoes; squeeze out & discard excess liquid.
  • Step #5 In a food processor/blender, cheese, basil, whirl tomatoes, nuts, & garlic until finely sliced.
  • Step #6 (Or with a knife, nuts, mince tomatoes, basil, & garlic; put in a bowl & mix in cheese.
  • Step #7 ) Add salt & pepper to taste.
  • Step #8 Nutritional analysis per tbsp.
