Oyster Shooter With Cucumber Sauce Recipe

Ingredients
  • 1 (8-oz) container plain yogurt
  • 1 tbsp fresh lemon juice
  • 1/4 tsp cracked black pepper
  • 3 c water
  • 2 tbsps minced fresh chives
  • 1 large shallot, finely minced (about 2 tbsps)
  • 1/4 c champagne vinegar
  • 2 dozen oysters in the shell
  • 1 English cucumber, peeled & sliced
  •  Garnish: caviar

Directions
  • Step #1 Process first 3 ingredients in a mixer or food processor/blender until smooth.
  • Step #2 Cover up & chill in the fridge.
  • Step #3 Combine shallot & next 3 ingredients In a large-ish bowl.
  • Step #4 Cover up & chill in the fridge.
  • Step #5 Shuck oysters, reserving oyster liquor.
  • Step #6 Add oysters & liquor to vinegar mixture; cover & chill 15 mins.
  • Step #7 Place 1 oyster in a shot glass.
  • Step #8 Dollop with cucumber sauce.
  • Step #9 Repeat procedure with remaining oysters & cucumber sauce.
  • Step #10 Garnish, if desired.
  • Step #11 Note: If you prefer to poach the oysters, shuck them, reserving their liquid.
  • Step #12 Add oysters to boiling water In a large-ish saucepan 3 to 5 mins or until edges begin to curl.
  • Step #13 Drain & proceed with recipe.
