Step #1 Rinse chanterelles, carefully rubbing mushroom gills with fingers to release any grit; drain.
Step #2 Repeat if necessary.
Step #3 Trim & discard bruised parts & discolored ends.
Step #4 Slice mushrooms 1/4 inch thick.
Step #5 In a 10- to 12-inch pan over high heat, stir mushrooms, 1 tbsp olive oil, & thyme until liquid is evaporated & mushrooms are browned, 1 tsp vinegar, 15 to 20 mins.
Step #6 Add 2 tbsps olive oil, the remaining vinegar, & salt & pepper to taste.
Step #7 Meanwhile, brush bread slices with remaining 1 tbsp olive oil & lay on a 14- by 17-inch baking sheet.
Step #8 Bake in a 350° oven until crisp & brown, about 15 mins.
Step #9 Top toast pieces equally with mushroom mixture & sprinkle with chives.
