Phyllo Triangles With Onion Jam Recipe

Ingredients
  • 1 tbsp sugar
  • 1 1/2 tbsps sliced fresh thyme leaves
  • 4 tsps butter, melted
  • 3 tbsps finely sliced fresh chives
  • 1 c thinly sliced shallots
  • 4 garlic cloves, minced
  • 2 tsps butter
  • 1/4 c fat-free, less-sodium chicken broth
  • 1/3 c (1 1/2 oz) blue cheese (such as Maytag)
  •  Cooking spray
  •  Dash of salt
  • 6 (18 x 14-inch) sheets frozen phyllo dough, thawed
  •  Remaining ingredients:
  • 4 c vertically sliced onion
  •  Jam:
  • 1/4 c dry white wine

Directions
  • Step #1 To prepare jam, heat 2 tsps butter In a large-ish nonstick skillet over medium-high heat.
  • Step #2 Add onion, shallots, & sugar; sauté 8 mins or until onion is lightly browned.
  • Step #3 Add garlic, & sauté 1 min.
  • Step #4 Stir in wine & broth; cook for 5 mins or until liquid evaporates.
  • Step #5 Remove from heat, & stir in the cheese, chives, thyme, & salt.
  • Step #6 Preheat oven to 400°.
  • Step #7 Place 1 phyllo sheet on a large cutting board or work surface (cover remaining phyllo to prevent drying).
  • Step #8 Cut sheet in quarters lengthwise; lightly coat with cooking spray.
  • Step #9 Spoon 1 level tbsp onion mixture onto 1 short end of each strip, leaving a 1-inch border.
  • Step #10 Fold 1 corner of edge with 1-inch border over mixture, forming a triangle; continue folding back & forth into a triangle to end of strip.
  • Step #11 Repeat procedure with remaining phyllo, cooking spray, & onion mixture.
  • Step #12 Place triangles, seam side down, on a baking sheet coated with cooking spray.
  • Step #13 Brush tops of triangles evenly with 4 tsps melted butter.
  • Step #14 Lightly coat tops with cooking spray.
  • Step #15 Bake at 400° for 11 mins or until golden.
