Mixed Herb Bruschetta Recipe

Ingredients
  • 1/4 c extra-virgin olive oil, plus more for drizzling
  • 2 c loosely packed tender green herbs, such as Thai basil, mint, parsley, summer savory, and/or tarragon
  • 6 c loosely packed basil leaves
  • 2 cloves garlic, sliced
  • 1 tbsp salt, plus more to taste
  •  Basic Bruschetta
  • 1/4 c grated parmesan cheese
  •  Freshly ground pepper

Directions
  • Step #1 Stir 1 tbsp salt into a large pot of boiling water.
  • Step #2 Add basil & other herbs; cook for 10 seconds, then drain.
  • Step #3 Plunge herbs into a large bowl of very cold water (this step helps preserve the bright green color).
  • Step #4 Drain & carefully squeeze out excess water.
  • Step #5 In a food processor/blender, whirl herbs with parmesan, 1/4 c extra-virgin olive oil, the garlic, & 2 tbsps water to make a paste.
  • Step #6 Add salt & pepper to taste.
  • Step #7 Spoon onto bruschettas & drizzle with extra-virgin olive oil.
  • Step #8 Note: Nutritional analysis is per serving with bruschetta.
