Party Plantain Chips Recipe

Ingredients
  • 1 1/2 tsps fine-grained sea salt
  • 4 green plantains (about 1 1/2 lbs)
  •  Peanut oil
  • 1 1/2 tsps grated lime rind

Directions
  • Step #1 Combine salt & lime rind; set aside.
  • Step #2 Pour oil to depth of 2 inches into a large Dutch oven; heat to 360°.
  • Step #3 Peel plantains; slice plantains lengthwise very thinly, using a mandoline.
  • Step #4 Fry plantain strips, 4 or 5 at a time, 30 seconds on each side or until golden.
  • Step #5 Drain on paper towels.
  • Step #6 Sprinkle top as soon as possible with salt mixture.
