Mediterranean Hummus Recipe

Ingredients
  • 1 (15 1/2-oz) can chickpeas (garbanzo beans), rinsed & drained
  • 1/4 c pitted kalamata olives
  • 2 tsps extravirgin olive oil
  • 3 tbsps fresh lemon juice
  • 1/4 tsp salt
  • 1/4 c sliced bottled roasted red bell peppers
  • 2 garlic cloves
  • 1/8 tsp black pepper

Directions
  • Step #1 Place all ingredients in a food processor/blender; process until smooth, scraping sides of processor bowl once.
  • Step #2 Store in an airtight container in refrigerator.
  • Step #3 Note: Serve with pita triangles or fresh vegetables.
