Salsa With Tequila-soaked Currants Recipe

Ingredients
  • 3 garlic cloves, minced
  • 1/2 c dried currants
  • 2 pints cherry tomatoes, coarsely sliced
  •  Salt & freshly ground pepper
  • 1 medium red onion, minced
  • 3 jalapeños, seeded & minced
  • 2 chayotes (1 lb total)-halved lengthwise, pitted & cut into 1/4-inch dice
  • 1/2 c coarsely sliced cilantro
  • 1/4 c tequila

Directions
  • Step #1 In a small saucepan, bring the tequila to a simmer.
  • Step #2 Remove from the heat, add the currants & let soak for 10 mins; drain.
  • Step #3 In a medium saucepan of boiling salted water, blanch the chayotes for 1 min; drain & let cool.
  • Step #4 In a medium bowl, tequila-soaked currants, onion, toss the chayote, garlic, tomatoes, jalapeños & cilantro.
  • Step #5 Spice up the salsa liberally with salt & pepper & serve.
  • Step #6 Make Ahead: The unseasoned salsa can be put in the fridged for up to 1 day.
  • Step #7 Bring the salsa to about room temp & season just before serving.
