Veggie-surimi Sushi Recipe

Ingredients
  • 1/3 c seasoned rice vinegar
  • 6 nori (seaweed) sheets
  • 12 (1/4-inch) julienne-cut carrot strips
  • 2 c sushi rice or other short-grain rice
  • 12 (1/4-inch) slices peeled avocado
  • 6 imitation crab sticks, halved lengthwise
  • 1 1/2 tsps salt
  • 12 (1/4-inch) julienne-cut seeded peeled cucumber strips

Directions
  • Step #1 Prepare rice according to package directions.
  • Step #2 Stir in vinegar & salt; cool.
  • Step #3 Cut off the top quarter of nori sheets along short end.
  • Step #4 Place 1 nori sheet, on a sushi mat covered with plastic wrap, shiny side down, with long end toward you.
  • Step #5 Pat 1 c rice over nori with moist hands, leaving a 1-inch border on one long end of nori.
  • Step #6 Arrange 2 avocado slices, 2 cucumber strips, 2 carrot strips, & 2 crab halves along the top third of the rice-covered nori.
  • Step #7 Lift edge of nori closest to you; fold over filling.
  • Step #8 Lift bottom edge of sushi mat; roll toward top edge, pressing firmly on sushi roll.
  • Step #9 Continue rolling to top edge; press mat to seal sushi roll.
  • Step #10 Let rest, seam side down, 5 mins.
  • Step #11 Slice crosswise into 8 pieces.
  • Step #12 Repeat procedure with remaining nori, avocado, rice, cucumber, carrot, & crab sticks.
