Poor Man's Caviar Recipe

Ingredients
  • 1 1/2 c finely sliced onion
  • 1 tsp salt
  • 1 (16-oz) can crushed tomatoes, undrained
  • 1/8 tsp pepper
  • 2 tbsps olive oil
  • 1 c finely sliced red bell pepper
  • 1 tbsp sugar
  • 2 (1-lb) eggplants
  • 2 tbsps lemon juice
  • 1 c finely sliced green bell pepper
  • 2 tbsps tomato paste
  • 1/3 c sliced fresh parsley
  • 1 tsp dried basil
  • 3 garlic cloves, minced

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Pierce eggplants with a fork; place on a foil wrap-lined baking sheet.
  • Step #3 Bake at 400° for 45 mins or until tender.
  • Step #4 Let cool slightly; peel & finely chop.
  • Step #5 Place eggplant in a colander; let drain.
  • Step #6 Heat oil In a large-ish nonstick skillet over medium-high heat.
  • Step #7 Add onion, bell peppers, & garlic, & sauté 8 mins or until tender.
  • Step #8 Stir in eggplant, parsley, & remaining ingredients.
  • Step #9 Cover up, reduce heat, & let simmer 1 hr, stirring every once in awhile.
  • Step #10 Serve caviar warm or chilled with assorted raw vegetables or toasted pumpernickel bread triangles.
