Pu-pu Platter Pineapple With Bacon Recipe

Ingredients
  • 1/2 lb thinly sliced bacon (about 11 slices), halved crosswise
  •  One 3/4-lb pineapple-peeled, cored & cut into 1-inch cubes (about 22 to 24 cubes)
  • 1 tsp curry powder

Directions
  • Step #1 Preheat the oven to 450°.
  • Step #2 Lay the bacon slices on a work surface & sprinkle with the curry powder.
  • Step #3 Roll up a pineapple cube in each bacon slice & transfer them to a rimmed baking sheet.
  • Step #4 Bake in the upper third of the oven for about 20 mins, or until the bacon is crisp & brown.
  • Step #5 Serve hot or at about room temp.
  • Step #6 Make Ahead: The bacon-wrapped pineapple can be put in the fridged overnight.
  • Step #7 Bring the hors d'oeuvre back to about room temp before baking.
