Baked Oysters Florentine Recipe

Ingredients
  •  Rock salt
  • 1/4 tsp hot sauce
  • 1/2 c butter
  • 1 tbsp Worcestershire sauce
  • 1/2 c sliced fresh parsley
  • 1/4 tsp coarsely ground pepper
  • 1 tbsp Pernod
  • 1 c grated Parmesan cheese
  • 1 (10-oz) package frozen sliced spinach
  • 1 c fine dry breadcrumbs
  • 1 1/2 garlic cloves, minced
  • 36 fresh oysters (in the shell)
  • 1/4 tsp salt (optional)

Directions
  • Step #1 Cook & drain spinach.
  • Step #2 Melt butter in a medium saucepan over medium-high heat.
  • Step #3 Add garlic; sauté 1 min or until tender.
  • Step #4 Stir in spinach & parsley; slowly add Pernod, and, if desired, next 4 ingredients, salt.
  • Step #5 Remove spinach mixture from heat, & add Parmesan cheese.
  • Step #6 Scrub oyster shells, & open; discard tops.
  • Step #7 Loosen meat, but leave it in the bottom shell.
  • Step #8 Make a bed of rock salt in a 15- x 10-inch jellyroll pan, & arrange oysters on the rock salt.
  • Step #9 Top oysters generously with spinach mixture.
  • Step #10 Bake at 450° for 10 mins.
  • Step #11 Alternate cooking method: Oysters may be cooked directly on a grill, covered, for 6 to 8 mins.
