Smoked Salmon And Herbed Egg Salad Involtini Recipe

Ingredients
  • 1 tsp Dijon mustard
  •  Salt & cayenne pepper
  • 2 tbsps snipped chives
  • 2 medium radishes, finely julienned
  • 1 lb thinly sliced smoked salmon, cut into twelve 6-by-3-inch rectangles
  • 1 tbsp finely sliced tarragon
  • 1/4 c crème fraîche
  • 6 hard-cooked large eggs, sliced

Directions
  • Step #1 In a medium bowl, chives, mix the eggs with the crème fraîche, tarragon & mustard; season this with salt & cayenne.
  • Step #2 Spread the salmon slices on a work surface.
  • Step #3 Mound 1 1/2 tbsps of the egg salad on the short ends.
  • Step #4 Top with a few radish sticks & roll this into tight cylinders.
  • Step #5 Cover up & put in the fridge until chilled, at least 20 mins.
  • Step #6 Trim the ends & cut the rolls in half.
  • Step #7 Garnish with the remaining radishes & serve.
  • Step #8 Make Ahead: The rolls can be put in the fridged overnight.
