Tarragon Pesto And Pear Melt Recipe

Ingredients
  • 1 baguette (about 10 oz.)
  •  Fresh-ground pepper
  • 3 tbsps coarsely sliced fresh tarragon (or 4 tsps dried tarragon)
  • 1 1/2 c lightly packed rinsed parsley
  • 3 firm-ripe pears (8 to 9 oz. each)
  • 2 cloves garlic, peeled
  • 1 3/4 c shredded gruyère cheese
  • 2 tbsps lemon juice
  • 1/4 c olive oil
  • 1/2 c shredded parmesan cheese

Directions
  • Step #1 In a food processor/blender, olive oil, parmesan cheese, tarragon, whirl parsley, garlic until finely sliced.
  • Step #2 Rinse, peel, core, & slice pears; in a bowl, mix with lemon juice.
  • Step #3 Slice baguette in half crosswise, then lengthwise.
  • Step #4 Arrange pieces cut side up on a 10- by 15-inch baking sheet & broil 4 to 6 inches from heat until lightly browned, 1 1/2 to 2 miuntes.
  • Step #5 Spread tarragon pesto on toasted bread.
  • Step #6 Overlap pear slices on top.
  • Step #7 Sprinkle top gruyère cheese evenly over pears, then generously grind pepper over cheese.
  • Step #8 Return to broiler until cheese is melted, about 2 mins.
  • Step #9 Slice diagonally into 1 1/2- to 2-inch-wide pieces.
