Corn-and-avocado Salsa Recipe

Ingredients
  • 2 tbsps orange juice
  • 1/4 c fresh lime juice
  • 1 tbsp fajita seasoning
  • 1/2 tsp pepper
  • 3/4 tsp salt
  • 2 ripe avocados, sliced
  • 2 tbsps vegetable oil
  • 1/4 c fresh sliced cilantro
  • 1 red bell pepper, sliced
  • 4 c fresh or frozen corn kernels
  • 1/2 jalapeño pepper, seeded & sliced
  • 1/2 c sliced green onions

Directions
  • Step #1 Sauté first 3 ingredients in hot oil In a large-ish skillet over medium-high heat 6 to 8 mins or until corn is slightly golden.
  • Step #2 Remove from heat; let cool.
  • Step #3 Stir together corn mixture, bell pepper, & next 6 ingredients.
  • Step #4 Cover up & chill at least 30 mins.
  • Step #5 Stir in avocado just before serving.
  • Step #6 Note: For testing purposes only, we used Badia Fajita Spice uping.
