Greek Tomato Tart Recipe

Ingredients
  • 1/4 tsp freshly ground pepper
  • 1/2 c oil-cured olives, pitted
  • 1 tbsp fresh thyme leaves
  • 3 tbsps olive oil
  • 6 oz Feta cheese
  •  Pastry for a 1-crust pie
  • 6 plum tomatoes, each cut lengthwise into 6 wedges

Directions
  • Step #1 Heat oven to 350° F.
  • Step #2 Fit the pastry in a 9-inch fluted tart pan with a removable bottom.
  • Step #3 Prick the bottom with the tines of a fork.
  • Step #4 Bake just until the crust begins to brown, 5 to 7 mins.
  • Step #5 Remove the crust from the oven & fill with the tomato wedges.
  • Step #6 Scatter the olives & cheese on top.
  • Step #7 Drizzle the olive oil over the tart & sprinkle with the thyme & pepper.
  • Step #8 Bake 25 mins or until the crust is golden & the tomatoes are soft.
  • Step #9 Serve warm or at about room temp.
