Roast Beef And Watercress Involtini Recipe

Ingredients
  • 3/4 c finely shredded red cabbage
  •  Pesto, for garnishing
  • 1/4 c very thinly sliced red onion
  • 1 1/2 tbsps fresh lemon juice
  •  Salt & freshly ground pepper
  • 1 1/2 tbsps extra-virgin olive oil
  • 1 1/2 packed c small watercress sprigs
  • 16 slices of rare roast beef (about 1 lb)

Directions
  • Step #1 In a medium bowl, whisk the olive oil with the lemon juice.
  • Step #2 Add the watercress, cabbage & onion, season this with salt & pepper & toss.
  • Step #3 Spread the roast beef slices on a work surface in pairs, overlapping them slightly along the sides, so you have eight 7-by-8-inch rectangles.
  • Step #4 Spice up the roast beef with salt & pepper.
  • Step #5 Mound the watercress salad on the meat & roll this into tight cylinders.
  • Step #6 Trim the ends & cut the rolls into thirds.
  • Step #7 Sprinkle top with salt, dot with pesto & serve.
  • Step #8 Make Ahead: The rolls can be put in the fridged for up to 1 hr.
