Field Pea Dip Recipe

Ingredients
  • 2 tsps paprika
  • 6 tbsps low-fat mayonnaise
  • 2 (14 1/2-oz) cans fat-free, less-sodium chicken broth
  • 1 tbsp fresh lemon juice
  • 2 tbsps hot pepper vinegar (such as Crystal)
  • 2 tbsps tahini (sesame-seed paste)
  • 2 c fresh pink-eyed peas
  • 2 tbsps sliced fresh chives (optional)
  • 2 garlic cloves, minced

Directions
  • Step #1 Combine peas & broth In a large-ish saucepan; bring to a boil.
  • Step #2 Reduce heat; simmer, partially covered, 30 mins or until tender.
  • Step #3 Drain peas.
  • Step #4 Place peas in a food processor/blender; pulse 10 times or until coarsely sliced.
  • Step #5 Combine peas, mayonnaise, & next 5 ingredients (mayonnaise through garlic) in a bowl, stirring until mixed.
  • Step #6 Garnish with chives, if desired.
