Sweet Corn And Hominy Quesadillas Recipe

Ingredients
  • 1 (15.5-oz) can white hominy, rinsed & drained
  • 2 tbsps canned sliced green chiles
  •  Cooking spray
  • 12 (6-inch) corn tortillas
  • 1 (10-oz) package frozen cream-style corn, thawed
  • 6 tbsps sliced green onions
  • 1/4 c sliced fresh cilantro
  • 3/4 c (3 oz) shredded reduced-fat cheddar cheese

Directions
  • Step #1 Spread about 2 1/2 tbsps corn over each of 6 tortillas.
  • Step #2 Sprinkle top 2 tbsps cheese over each; top each with 1/4 c hominy, 1 tsp chiles, 1 tbsp onions, 2 tsps cilantro, & 1 tortilla.
  • Step #3 Heat a large nonstick skillet over medium-high heat.
  • Step #4 Coat pan with cooking spray.
  • Step #5 Place 2 quesadillas in pan; cook 3 mins on each side or until tortillas are lightly browned.
  • Step #6 Set aside, & keep warm.
  • Step #7 Repeat procedure with remaining quesadillas.
  • Step #8 Cut each quesadilla into 4 wedges.
