Jerked Ribs Recipe

Ingredients
  • 3 tbsps vegetable oil, divided
  • 1 medium onion, quartered
  • 6 celery leaves
  • 2 tbsps lemon juice
  • 2 cloves
  • 1 bay leaf
  • 1 c water
  • 6 lbs baby pork spareribs
  •  Jerk Spice uping
  • 1 tsp dried thyme
  • 1/4 tsp freshly ground black pepper

Directions
  • Step #1 Cut ribs into 2- to 3-rib sections.
  • Step #2 Bring ribs, next 6 ingredients, & water to cover to a boil In a large-ish Dutch oven over high heat.
  • Step #3 Reduce heat, simmer 30 mins or until tender.
  • Step #4 Drain.
  • Step #5 Rub ribs with 1 tbsp oil.
  • Step #6 Set aside 1 tbsp Jerk Spice uping; rub ribs evenly with remaining Jerk Spice uping, & place this In a large-ish pan.
  • Step #7 Cover up & chill 1 hr.
  • Step #8 Stir together 1 c water, remaining 2 tbsps oil, lemon juice, & 2 tsps reserved Jerk Spice uping.
  • Step #9 Set aside.
  • Step #10 Prepare fire by piling charcoal or lava rocks on one side of grill, leaving the other side empty.
  • Step #11 Coat food rack with cooking spray, & place rack on grill.
  • Step #12 Arrange food over empty side, & grill, over medium-high heat (350° to 400°) 1 hr, covered with grill lid, turning once & basting every once in awhile with lemon juice mixture.
  • Step #13 Sprinkle top with remaining 1 tsp Jerk Spice uping before serving.
