Soy-braised Mushrooms Recipe

Ingredients
  • 3 cloves garlic, peeled
  • 8 thin slices (quarter size) fresh ginger
  • 1/4 c dry sherry
  • 2 oz dried whole shiitake mushrooms (2 to 3 in. wide)
  • 2 tbsps sugar
  • 1/4 c soy sauce
  •  Thinly sliced green onions
  • 1 tsp Asian sesame oil

Directions
  • Step #1 Rinse mushrooms well & place this in a 1 1/2- to 2-quart pan.
  • Step #2 Cover up with hot water & let this stand until soft, 15 to 20 mins.
  • Step #3 Lift mushrooms out & trim off & discard tough stems.
  • Step #4 Slowly pour 2 c of the soaking water into a glass measure & reserve; discard remaining water with sediment.
  • Step #5 Rinse pan & return mushrooms & reserved soaking water to it; add soy sauce, sherry, & sugar.
  • Step #6 Lightly crush ginger & garlic with the flat side of knife & add to pan.
  • Step #7 Cover up pan & bring to a boil over high heat; reduce heat & let simmer until mushrooms are tender to bite, 15 to 20 mins.
  • Step #8 Uncover & boil over high heat until most of the liquid has evaporated, about 15 mins.
  • Step #9 If desired, remove ginger & garlic.
  • Step #10 Stir in sesame oil.
  • Step #11 Pour mushrooms into a serving dish & sprinkle with green onions.
  • Step #12 Serve hot or cool.
