Creamy Olive Spread Recipe

Ingredients
  • 2 tbsps olive oil
  • 1/4 tsp salt (optional)
  •  Crackers or pita chips
  • 2 tbsps fresh lemon juice
  • 2 (8-oz) packages cream cheese, softened
  • 1/2 c sliced pimiento-stuffed olives
  • 1 garlic clove, minced
  • 1 (4.25-oz) can sliced black olives

Directions
  • Step #1 Stir together first 6 ingredients and, if desired, salt.
  • Step #2 Serve with crackers.
  • Step #3 Note: To make ahead, place spread in an airtight container, & chill for up to 1 week or freeze for up to 2 weeks.
  • Step #4 Thaw in refrigerator.
  • Step #5 Let stand at about room temp 30 mins, & stir before serving.
