Mashed Potato Bites Recipe

Ingredients
  • 1 c instant potato flakes
  • 2 tsps ground red pepper
  •  Ground red pepper
  • 1 tsp dried parsley flakes
  • 1/2 c whipping cream
  • 1/2 c water
  • 2 (11.5-oz) packages put in the fridged cornbread sticks
  • 1 large egg, separated
  • 3 tbsps butter or margarine
  • 1/2 c grated Parmesan cheese, divided

Directions
  • Step #1 Unroll cornbread sticks, & separate at perforations.
  • Step #2 Flatten into 5- x 2-inch strips.
  • Step #3 Bring 1/2 c water & butter to a boil in a medium saucepan; reduce heat to low, 6 tbsps Parmesan cheese, & stir in the egg yolk, & next 4 ingredients.
  • Step #4 Remove mixture from heat.
  • Step #5 Place 1 tbsp potato mixture on each cornbread strip.
  • Step #6 Fold cornbread over, pressing edges to seal.
  • Step #7 Brush with lightly beaten egg white, & sprinkle with remaining 2 tbsps Parmesan cheese & ground red pepper.
  • Step #8 Place bites on baking sheets.
  • Step #9 Bake at 375° for 10 to 12 mins or until light golden.
  • Step #10 Cool on wire racks.
