Blue Cheese Spread With Spiced Walnuts Recipe

Ingredients
  • 2 tbsps brandy or milk
  • 1/8 tsp ground cinnamon
  • 3 tbsps thinly sliced chives or green onions
  • 1/4 tsp pepper
  • 1/4 c crumbled blue cheese
  • 2 tsps sugar
  • 1/8 tsp ground cumin
  • 1/2 c coarsely sliced walnuts
  • 3 dozen unsalted water crackers or thin apple slices
  • 2 tsps olive oil
  • 1/8 tsp ground cardamom
  • 2 tsps chili oil
  • 1 package (8 oz.) cream cheese
  • 2 tbsps butter or margarine, at about room temp
  • 1/4 c fresh chèvre (goat) cheese
  • 1/4 tsp salt

Directions
  • Step #1 Beat cream cheese, butter, blue cheese, chèvre, & brandy until creamy.
  • Step #2 Stir in 2 tbsps chives.
  • Step #3 Mound in a small, shallow dish.
  • Step #4 If making ahead, cover & chill up to 2 days.
  • Step #5 In a small bowl, cinnamon, mix salt, cumin, pepper, & cardamom.
  • Step #6 Pour chili oil & olive oil into an 8- to 10-inch nonstick frying pan over med-heat/flame.
  • Step #7 Add walnuts.
  • Step #8 Stir often until toasted, 5 to 7 mins.
  • Step #9 Add sugar & stir until it melts onto nuts, about 1 min.
  • Step #10 Pour hot nuts into bowl with spices & mix to coat.
  • Step #11 If making ahead, let cool & store airtight up to 2 days.
  • Step #12 Sprinkle top nuts & remaining 1 tbsp chives over cheese.
  • Step #13 Spread mixture onto crackers.
