Artichoke Frittata Recipe

Ingredients
  • 2 jars (6 oz. each) marinated artichoke hearts
  • 1/2 tsp hot sauce
  • 6 large eggs
  • 1/4 tsp salt
  • 1/4 tsp dried oregano
  • 1/4 tsp pepper
  • 1/4 c shredded parmesan cheese
  • 1 tbsp minced garlic
  • 1 onion (8 oz.), peeled & sliced
  • 2 c shredded cheddar cheese
  • 1/4 c fine dried bread crumbs

Directions
  • Step #1 Drain artichoke hearts, reserving 2 tbsps marinade; discard remaining marinade.
  • Step #2 Coarsely chop artichoke hearts.
  • Step #3 In a 10- to 12-inch nonstick, ovenproof frying pan over medium-high heat, frequently stir onion & garlic in reserved marinade until onion is limp, about 5 mins.
  • Step #4 Meanwhile, In a large-ish bowl, whisk together eggs, bread crumbs, hot sauce, pepper, salt, oregano, & cheddar cheese.
  • Step #5 Stir in artichokes.
  • Step #6 Pour evenly into pan with onion mixture.
  • Step #7 Sprinkle top parmesan cheese over the top.
  • Step #8 Transfer pan to a 350° regular or convection oven & bake this until center of frittata is set & top is lightly browned, about 30 mins.
  • Step #9 Serve warm or at about room temp; cut into 12 wedges.
